Cinnamon Apple Rosettes



1 frozen puff pastry, thawed (makes 5 rosettes)

3-4 red apples, quartered

2 tablespoons sugar

2 tablespoons cinnamon

preserves of your choice

lemon juice + water

powdered sugar



Prepare jumbo muffin tin with liners and cooking spray. Preheat oven to 375 degrees. Thinly slice red apples. Place in lemon water to preserve. Cut puff pastry into 5 long strips. Smear preserves along bottom half of a strip. Mix cinnamon and sugar and sprinkle on preserves. Line apples on top, overlapping them. Fold the bottom part of the pastry over the apples. Tightly roll into rosette and place into muffin tin. The rosette will fit tightly into the liner. Bake for 30 to 45 minutes. Sprinkle with powdered sugar and serve.
