Cheddar Cauli-tots

Ingredients

  • 3 cups raw cauliflower
  • 1 cup cheddar, shredded
  • 1 large egg
  • 1/4 cup cornmeal
  • 1 teaspoon salt
  • 1/2 teaspoon ground mustard

Instructions

  1. Preheat oven to 400 degrees.
  2. Shred cauliflower in a food processor and squeeze out excess water with a clean dish towel.
  3. Combine all ingredients in a bowl and mix well.
  4. Spoon mixture into a greased pan (mini muffin pan works best) and cook for 20 minutes.
  5. Serve.
