This healthy, flavorful dish comes together in just under an hour and requires minimal prep-work.
Recipe: Baked Lemon Quinoa
2 cups chicken broth
1 cup quinoa (or other grain)
1-2 green onions, finely chopped
1 1/2 teaspoons lemon zest, finely grated
1 teaspoon minced garlic
1/2 teaspoon salt
Preheat oven to 350 degrees and prepare 8x8 baking dish with non-stick cooking spray. Add quinoa, onions, lemon zest, garlic and salt to baking dish. Pour broth over the top and stir to combine. Cover baking dish with foil and bake for 30 to 35 minutes. Let rest, covered, for 5 to 10 minutes, then fluff with a fork and serve.
