Kale and Brussels Sprout Salad


For dressing

2 tablespoons lemon juice

1 tablespoon Dijon mustard

1 teaspoon shallot, finely minced

1 small garlic clove, minced

pinch kosher salt

pinch black pepper

¼ cup extra virgin olive oil

For salad

3 cups kale, thinly sliced

1 pound Brussels sprouts, shaved

3-4 sliced turkey bacon, chopped

¼ cup roasted almonds, chopped

½ Pecorino cheese, finely grated

½ cup dried cranberries

Directions: Mix dressing ingredients and pour over salad ingredients. Mix well.
