Mango Marinated Country-Style Pork Kabobs


For the skewers

3 cups country style ribs (Pork)

2 cups pineapple

1 red bell pepper

1 green bell pepper 1 1/2 red onion

For the marinade

2 mangoes

1 onion

3 cloves garlic

1/2 cup white wine vinegar

1/4 cup + 2 tablespoons brown sugar

1/4 cup soy sauce

2 tablespoons olive oil

1 1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon chili powder

1/2 teaspoon cayenne powder

1/4 teaspoon cumin

Directions:  Place all the ingredients for the marinade in food processor. Pulse a few times and then blend well. Soak wooden skewers in water for 20 minutes. Chop all ingredients into 1″ cubes. Skewer layering all of the ingredients. Pour marinade over kabobs. Marinade for 2 hours or overnight in the refrigerator. Grill kabobs basting while grilling for 15-20 minutes or until the pork is thoroughly cooked (165 F).
