Use these candied lemon slices to garnish desserts, like lemon tartlets or a lemon ice-box pie.
Ingredients
- 2 lemons
- ice water
- 2 cups granulated sugar
- 2 cups water
Instructions
- Thinly slice lemons and remove seeds. Fill a medium-size bowl with ice and water. Meanwhile, bring a pot of water to a boil and add lemon slices. Boil for one minute and remove slices, transferring them to the ice water. Let lemon slices sit in the ice water for 2 to 3 minutes until cool, then drain. In a medium-size skillet bring sugar and water to a simmer and stir occasionally until the sugar dissolves. Add the lemon slices to the skillet in a single layer. Let simmer for an hour, or until rinds are translucent. Remove lemon slices and let cool on a wire rack.
