Recipe: Lemon Chicken with Asparagus

Zesty lemons and sweet honey butter sauce bring this simple chicken and asparagus dish to life.

Recipe: Lemon Chicken with Asparagus

Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1/4 cup flour
  • 1/2 teaspoon salt, pepper to taste
  • 2 tablespoons butter
  • 1 teaspoon lemon pepper seasoning
  • 1-2 cups chopped asparagus
  • 2 lemons, sliced
  • fresh parsley for topping
  • For optional honey butter sauce:
  • 2 tablespoons honey
  • 2 tablespoons butter

Instructions

  1. For the chicken: Cover chicken breasts with plastic wrap and pound until each piece is roughly 3/4 of an inch thick (if your chicken breasts are on the thick side, you can also just cut them in half horizontally rather than pounding). Mix flour, salt and pepper in a shallow dish and toss each chicken breast in dish to coat. Melt 2 tablespoons butter in a large skillet over medium-high heat, then add the chicken and cook for 3 to 5 minutes on each side or until golden brown, sprinkling each side with lemon pepper directly in the pan. When the chicken is cooked through, transfer to a plate and set aside.
  2. For the asparagus and lemons: Add the chopped asparagus to the same pan you cooked the chicken in. Saute for several minutes until bright green and tender crisp. Remove them from the pan and set aside. Then, lay lemon slices flat on the bottom of the pan and cook, without stirring, for a few minutes on each side until they caramelize (if needed, add a small pat of butter to the pan with the lemons to help prevent sticking). Remove lemons from pan and set aside.
  3. For the honey butter sauce (optional): Melt 2 tablespoons butter along with the honey in a small pan.
  4. Finally, layer all ingredients in the pan - asparagus, chicken and lemon slices on top. Top with honey butter sauce and fresh parsley to serve.
