Refreshing Thai-Inspired Salad


  • 2 cucumbers
  • 1 small onion
  • 2 bunches radishes
  • 3 carrots, peeled
  • 1 cup rice wine vinegar
  • 1/2 cup sugar
  • 1 teaspoon salt


  1. Rinse and slice all the vegetables as thin as possible, using a mandoline if available.
  2. In a large bowl, whisk together the vinegar, sugar and salt until the sugar is dissolved.
  3. Transfer the vegetables into the bowl, and toss until evenly coated. Keep refrigerated for up to a week.
