Refreshing Thai-Inspired Salad
- 2 cucumbers
- 1 small onion
- 2 bunches radishes
- 3 carrots, peeled
- 1 cup rice wine vinegar
- 1/2 cup sugar
- 1 teaspoon salt
- Rinse and slice all the vegetables as thin as possible, using a mandoline if available.
- In a large bowl, whisk together the vinegar, sugar and salt until the sugar is dissolved.
- Transfer the vegetables into the bowl, and toss until evenly coated. Keep refrigerated for up to a week.
