Roasted Brussels Sprout Dip


1 pound Brussels sprouts, trimmed and quartered

1 tablespoon olive oil

salt and pepper to taste

1 tablespoon garlic, minced

½ teaspoon thyme

4 ounces cream cheese, room temperature

¼ cup sour cream

¼ cup mayonnaise

¾ cup mozzarella cheese

¼ cup parmesan cheese, grated

Directions: Toss Brussels sprouts with olive oil, garlic and salt and pepper. Lay flat on baking sheet and bake at 400 degrees until brown, tossing periodically. Mix everything and place in baking dish. Bake at 350 degrees for 20 minutes. Serve with bread or pita chips.
