Zhuzh It Up: Dirty Rice


  • 1 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 cups chicken broth
  • 1 cup dried rice
  • 1 tablespoon olive oil
  • 1 pound hot sausage
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon cajun seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon red chili flakes
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Sour cream and Tabasco sauce for topping


  1. In a medium pot on medium heat, preheat the olive oil before adding in the garlic. Sauté until fragrant, then add the tomato paste. Reduce for about 3-5 minutes, and then add the chicken broth. Bring to a boil, add in the rice, and cook as directed.
  2. In a large skillet, preheat the olive oil and add the sausage. Use a wooden spoon to break up the sausage into small pieces, and add all the seasonings.
  3. Once the sausage is cooked, add in the peppers and onions, and cook until softened.
  4. When the rice is cooked, add to the sausage and vegetables. Stir until combined, and continue cooking for 5 minutes.
  5. Transfer to a bowl, and add Tabasco sauce and sour cream.
